How a Hoshizaki crescent cuber works

In a KM cuber, water flows over a vertical evaporator plate during the freeze cycle while refrigerant chills it. When the ice reaches the right thickness, the machine switches to harvest: hot refrigerant gas warms the plate, and water assists the release so the cubes drop into the bin. A float switch, thermistors and timers decide when each cycle starts and ends.

Scale on the plate or in the water distribution tubes slows harvest and changes cube shape. A float switch coated with minerals sends wrong signals to the board, and the machine may stop on a safety timer.

Flakers and cubelet machines

Flakers and cubelet machines freeze water inside a cylinder and use a rotating auger to scrape and push ice out the top. The auger, bearings, gear motor and seals carry heavy loads. Scale increases friction, and worn bearings produce grinding or squealing.

When those parts wear, ice output drops and the machine may shut down on overload. Early attention to noise can prevent a larger repair.

It needs a full cleaning and sanitizing, including the bin and any parts that can be removed. Better ventilation and a regular sanitizing schedule reduce regrowth.
