Scotsman builds two very different kinds of ice machine. Prodigy cubers freeze water on a vertical evaporator plate and drop finished cubes into a bin on a harvest cycle, guided by water level and ice thickness sensors. Nugget and flake machines work continuously: an auger turns inside a refrigerated cylinder, scraping ice off the wall and pushing it up through a head where nugget ice is compressed.

Both designs are reliable when the water is treated and the condenser can breathe. In valley kitchens and bars, neither is a given. Hard water deposits scale on evaporators, sensors and augers, and hot back-of-house spaces or rooftop condensers in summer heat push the refrigeration system to its limits. Prodigy cubers and their sensors

Prodigy machines use a water level sensor and an ice thickness sensor to time each cycle. When scale coats those sensors, the machine misjudges when to stop filling or when to harvest, producing thin cubes, bridged slabs or long cycles. The front-panel AutoAlert lights often flag a water, harvest or cleaning issue before production stops.

Many Prodigy calls end with a thorough clean and sanitize, sensor cleaning and a check of the water pump and purge valve. When a sensor or valve has failed, we replace it and confirm cycle timing.

Nugget and flake machines

Auger machines put mechanical load on a gearmotor and bearings. Scale on the evaporator wall increases friction, and the auger can squeal, grind or stall. Bearings wear over time, and water leaks at the seal can reach the gearmotor.

We inspect the auger, bearings, seal and gearmotor, and descale the evaporator. Catching bearing wear early avoids damage to the auger and evaporator.

Heat, airflow and condensers
