Kitchen conditions that wear on a reach-in

Commercial refrigerators pull air from the kitchen to cool their condensers. In a hot kitchen with fryers, ovens and grills nearby, that air is warm and often carries grease. Grease plus dust mats the condenser coil faster than in a residential setting, and the compressor works harder to keep the box at temperature.

Top-mounted condensers on reach-ins sit in the hottest air near the ceiling, while bottom-mount units on prep tables pull in floor dust and flour. Each needs a cleaning routine suited to where it sits.

Prep table rails versus the cabinet

A prep table has two cooling zones: the cabinet underneath and the rail of pans on top. The rail is open to kitchen air whenever the lid is up, and it depends on airflow from the evaporator and correct pan placement. When the lid is left open during slow periods or pans are overfilled above the rim, the rail warms while the cabinet stays cold.

We measure both zones and check the air path between them before suspecting a component.

Daily and weekly checks for kitchen staff

Keep air vents inside the cabinet clear of boxes and wrap. Close rail lids when the line is slow. Wipe gaskets so they stay soft and seal fully, and look for tears at the hinge side. Brush lint and grease from the condenser grille on a schedule. Make sure doors close on their own and are not propped by product or carts.

Do not use sharp tools on frost or ice, and do not climb on or lean on top-mount units to reach the condenser. Shut off power before cleaning near fans.
