Ice machine output drops as room temperature and incoming water temperature rise, and in summer both climb here. Add a dusty condenser or some scale on the evaporator and production falls further. We time the freeze cycle, clean the condenser and check for scale. If the machine is healthy but undersized, we tell you that too.
Harvest relies on warming the evaporator so the slab releases cleanly. Scale holds ice to the plate, and a failed harvest valve or control fault prevents the warm-up. Uneven or bridged cubes can also hang up. We inspect the evaporator, test the harvest circuit and clean the plate if scale is the cause.
The bin control should shut the machine off when ice reaches it. If the control has failed, is out of adjustment or the sensor is dirty, the machine keeps making ice. Turn the machine off and remove some ice to prevent an overflow mess. We test and adjust or replace the bin control.
It needs clean condenser fins and room air it can reject heat into. Keep the fins clean, keep boxes away from the vents, and make sure the room has ventilation. A machine pulling in its own hot exhaust will produce far less ice. If the room cannot be cooled, a remote condenser may be worth discussing.
Warm, wet surfaces and airborne yeast from bars and kitchens let slime grow on the evaporator, water trough and distribution tube. It affects taste and can clog water flow. Regular sanitizing is the fix, and we clean and sanitize the full water system when slime is part of the problem.

Freeze, harvest and what interrupts them
A cube head pumps water across a chilled evaporator until the ice reaches the right thickness, then switches to harvest and warms the plate so the slab drops into the bin. Anything that changes water flow or heat transfer changes those timings: scale on the evaporator, a clogged distribution tube, a weak pump or a dirty condenser.
Timing each cycle tells us more than looking at the machine. A long freeze points at the condenser or refrigeration side; a slow or failed harvest points at scale, the harvest valve or the controls. Remote condensers on rooftops sit in full summer sun, which we account for when the machine struggles only on hot afternoons.

Operator checks that save a service call
Check the filter cartridge date; an overdue filter slows fill and speeds scale. Look at the air-cooled condenser fins, and if they are coated, clean them with power off. Confirm the room is not trapping heat: a machine in a closet with no air exchange will lose production all summer.
Look at the evaporator through the front panel. White crust or pink and black slime means cleaning is overdue. Use only cleaner approved for the machine, because the wrong chemical can damage the evaporator plating.
