Probe, curtain and harvest: reading a Manitowoc
On Manitowoc cube machines, water flows down a vertical evaporator. An ice thickness probe sits just off the plate, and when the ice bridges to it, the control starts harvest. Scale on the probe or the plate throws that timing off, giving thin, incomplete or overly thick slabs.
During harvest the slab slides off and swings the water curtain open, which tells the control the harvest is done. If ice sticks, the curtain never opens and the cycle stalls. If ice in a full bin holds the curtain open, the machine shuts off as designed. We use those signals, and the Indigo NXT display where present, to narrow the fault.

Keep an eye on the cubes. Thin or partial cubes, or slabs that do not fall cleanly, are early signs of scale. Check the filter change date and the condenser fins. Make sure the water curtain is seated properly after anyone has cleaned the machine; a curtain left off or hanging crooked will stop it.
Clean and sanitize on the schedule your installation needs, using only Manitowoc-approved chemicals. Always switch the machine off before reaching into the evaporator area.
