A La Cornue oven does not cook like a typical American range. The vaulted ceiling moves heat in a rolling pattern, so the oven relies less on a fan, and many Château ranges combine a gas oven and an electric oven in the same unit. The gas side uses a European-style burner with a flame-failure safety device, and the electric side uses elements, a thermostat and on some models a convection fan.
That mix means two ovens on the same range can fail for completely different reasons. We confirm which oven type is involved, test the ignition and safety device or the elements and thermostat, check the actual cavity temperature, and confirm parts availability through the import channel before we quote. Everything is protected during the work, since the finishes are a large part of the range's value.
Gas ovens and the flame-failure device
On a La Cornue gas oven, a thermocouple sits in the flame and generates a small current that holds the gas valve open. If the thermocouple weakens, its tip is out of the flame or the connection at the valve is dirty, the burner lights and then goes out. To the cook, this looks like an oven that will not stay lit.
We test the thermocouple's output, check its position and clean or replace the connection. Replacing the thermocouple without checking its position in the flame can leave the problem in place.
Electric ovens and the vaulted cavity
On the electric side, slow preheating usually points to an element, while uneven or wrong temperatures point to the thermostat or its sensing bulb. Because the vaulted cavity distributes heat differently, a thermometer reading in one spot does not tell the full story. We take readings at several points and compare them with what the oven should do.
What you can do before the visit
Note which oven is affected and whether it is gas or electric. For gas, watch whether the burner lights and then goes out, or never lights. For electric, check the breaker. Take a photo of the model and serial plate, often on the inside of the oven door frame or behind a lower panel, so we can check parts early.
Avoid harsh cleaners on the enamel and do not remove oven floor panels or burner covers yourself. If you smell gas, close the supply and ventilate before doing anything else.
