Repairing Vulcan ovens in the Las Vegas Valley

In a commercial kitchen, a Vulcan oven is a production tool, and every hour it is down costs covers, menu items or overtime. How a VC convection oven fails

A gas VC oven depends on the blower to move heated air through the cavity and on a series of safety checks before the burner lights. If the blower is not proven running, or the door switch says a door is open, the burner will not fire. Many no-heat calls trace back to a door switch, a worn blower motor or an ignition module, not to the gas valve.

Doors on VC ovens are linked so both open together. Heavy daily use wears the chain or linkage, and a door that closes unevenly can stop the oven or leak heat into the line.

Oven bases on restaurant ranges

Range-base ovens use a burner under the oven deck, a pilot or ignition system, a safety valve and a thermostat. When the pilot goes out or the safety valve fails, the oven will not light. A thermostat out of calibration shows up as inconsistent cook times, burned bottoms or slow recovery after loading.

We check pilot flame, thermocouple output and thermostat accuracy together, since one part can mask the symptoms of another.

Heat, grease and the cookline

Convection ovens use a door switch to stop the blower and heat when the doors open, which protects staff from hot air. That is normal. If the oven does not restart after the doors close, or shuts off while closed, the switch, door alignment or door linkage may be the problem and should be checked.
