Repairing Everest freezers in the Las Vegas Valley

A commercial freezer fails differently from a cooler. An Everest reach-in or undercounter freezer pulls its evaporator coil well below freezing, so every door opening brings in moisture that turns to frost on the coil. A defrost system has to melt that frost on a schedule and drain the water away. When any part of that loop breaks, the coil ices solid and the box warms even though the compressor never stops running.

That is why a warm Everest freezer with a running compressor is usually a defrost or airflow problem rather than a dead compressor. We look at the coil, the fans, the defrost heater and termination, the controller's defrost settings and the drain before anything else, then quote the fix and tell you how long the unit needs to recover.

Reading the ice pattern

Where the ice sits tells us a lot. A coil frozen evenly from top to bottom suggests the defrost never ran, which points at the heater, the termination sensor or the controller. Ice concentrated near the drain end, or a sheet of ice on the cabinet floor, points at a drain line that froze or a drain heater that failed.

Frost packed around the door frame and on the top shelf points the other way: warm air getting in through a torn gasket, a sagging hinge or a door that staff leave cracked during prep.

Busy kitchens and door traffic

During a rush, freezer doors open constantly. Every opening adds moisture and heat. A freezer that keeps up on a slow Tuesday may lose ground on a Saturday night, especially in a hot kitchen near cooking equipment.

We look at door closers, gaskets and strip curtains if used, and check the controller's defrost frequency. Sometimes a settings change or door hardware repair prevents repeated icing.

Condenser and compressor load

Like Everest coolers, the freezers are self-contained and reject heat into the room. A dirty condenser or failed condenser fan raises pressure and makes the compressor work harder. In summer, a freezer near the cook line has very little margin.

Staff checks and safe steps

Defrost water drains through a line that may have a heater to keep it from freezing. If the drain heater fails or the line clogs, water refreezes inside the cabinet. A defrost problem can also add more water than the drain can handle. We clear the drain and test the heater and defrost system.

Most commercial freezers call for a dedicated circuit, and the specification sheet for your model lists it. When a freezer shares a circuit with other kitchen equipment, the voltage can dip at compressor start, which strains the compressor and can trip the breaker during a rush. Repeated tripping is often mistaken for a freezer fault, so tell us how the circuit is wired.

Frost or condensation around the door frame usually means the gasket is not sealing or the door is not closing fully. Some freezers also have frame heaters that prevent condensation; if one fails, moisture can appear. Check the gasket and door alignment.
