Repairing La Cornue cooktops in the Las Vegas Valley
The cooking surface on a La Cornue can be configured in many ways: open gas burners with brass caps, a French top, a simmer plate, a griddle or induction zones, all arranged to order. The gas burners use thermocouple flame-failure devices, which are standard in European designs, so a burner must be held at the knob briefly after lighting until the thermocouple warms enough to hold the valve open.
Most cooktop calls come down to ignition, the thermocouple circuit, clogged ports or, on induction models, electronics and cookware detection. Spark ignition versus flame holding
Two separate systems are at work on a La Cornue gas burner. The spark igniter lights the gas, and the thermocouple keeps it lit. If the burner never lights, the igniter, its switch or the spark generator is the likely cause. If it lights and goes out when the knob is released, the thermocouple circuit is the focus.

Brass burners and port care
Brass burner caps and heads develop a patina with use, which is normal. Spills that bake into the ports or onto the thermocouple tip are not. Blocked ports give uneven or lifting flames, and a coated thermocouple may not hold the flame. Gentle cleaning with the right tools restores both without scratching the brass.
Induction zones on a La Cornue
Induction zones depend on a power module, coils and a cooling fan. A zone that shows an error or will not detect a pan may be reacting to the cookware, a blocked fan inlet under the cooktop or a failing module. We rule out cookware first, then test the electronics.
If your induction zones sit next to gas burners, heat from the gas side can affect the electronics if ventilation under the top is restricted.
Owner checks and safety
Hold the knob in for several seconds after lighting, as the manual describes. Clean and dry the burner and seat the cap squarely. Check that the gas supply valve is open. For induction, test with a magnetic, flat-bottomed pan.
Do not adjust burner orifices, air shutters or the gas regulator yourself. A gas odor overrides everything else: burners off, supply valve shut, windows open, and get out of the house if it is strong.

Many European-style burners use a thermocouple flame-failure device. Holding the knob in for a few seconds lets the thermocouple heat up and keep the gas valve open. If the burner goes out after you release the knob, the thermocouple or its connection may be failing. This is a common repair.
The igniter may not be sparking near the gas, the burner cap may be misaligned or the ports may be clogged. Clean and dry the burner, then make sure the cap sits correctly. If it still will not light, we test the igniter, spark module and gas supply.

Remove the caps and burner heads, wash them with warm water and mild soap and dry them thoroughly. Avoid harsh abrasives on enamel and brass. Make sure everything is dry and seated correctly before lighting. Moisture or misaligned parts cause most ignition problems after cleaning.
A burner cap that is not seated squarely, or a head that was put back slightly off, gives an uneven flame. Water left in the ports can also make the flame sputter until it dries. Reassemble the burner carefully, make sure it is fully dry and relight. If the flame is still uneven, the ports may be partly blocked.
Proper gas pressure is set at installation, and a regulator keeps it steady. If flames suddenly seem weak or too large on all burners, or other gas appliances also act strange, the supply pressure may be the issue. A technician can measure it with a gauge. Do not adjust the regulator yourself.
The spark may be jumping somewhere other than the burner, such as to a cracked igniter's base or through moisture. A damaged igniter, a wet burner or a failing spark generator can all cause this. Dry the burner thoroughly first. If clicking continues without a visible spark at the burner, have it tested.
Many gas cooking appliances can be converted with the correct orifices and adjustments, and La Cornue has conversion parts for many models. Conversion belongs in a technician's hands, followed by a flame check on every burner. Most valley homes use natural gas, so conversion is mainly relevant for properties on propane.
Avoid abrasive pads, harsh chemicals and metal polish on the burner ports or thermocouple. These can scratch the brass, clog openings or damage the flame-failure device. Follow the cleaning advice in your manual. A soft brush and mild soap on cooled parts handle most routine cleaning.
