What to know about AGA cooktops

The cooking surface on a traditional AGA is a pair of cast-iron hotplates, a hotter boiling plate and a cooler simmering plate, each with a heavy insulated lid that is kept closed when not in use to hold the stored heat. The hotplates have no dials, so slow boiling usually points to the overall heat level, the main thermostat, or heat lost through open lids. AGA's conventional range cookers have a gas or induction cooktop with their own burners or power electronics. We identify the cooktop type, measure surface temperatures and test the relevant components.

Repairing AGA cooktops in the Las Vegas Valley

On a traditional AGA, the cooktop is two round cast-iron hotplates: a boiling plate held very hot and a simmering plate held cooler, each covered by a heavy insulated lid that stays down when the plate is not in use. There are no burners and no dials. Heat comes from the same stored warmth that runs the ovens below.

AGA's conventional range cookers are different. They have a gas, electric or induction cooktop with knobs or touch controls, and those parts behave like any other premium range surface. Whatever you call it, we confirm which AGA you own before testing, since the parts and methods have almost nothing in common.

Why a hotplate boils slowly

A boiling plate that has slowed down is usually telling us something about the cooker's overall heat. If the ovens are cool too, the heat source or thermostat is likely. If the ovens are fine but the plate is slow, heat may be escaping through a lid left open, a worn lid lining, or a pan that does not sit flat on the plate.

Hotplates need flat-bottomed, heavy pans. A warped pan can make a healthy plate feel weak, because so little of its base touches the cast iron.

Lids, hinges and the insulation behind them

Each insulated lid is a heavy dome lined with insulation and fixed to a hinge. When the hinge wears or the lining deteriorates, the lid no longer seals against the top plate and stored heat leaks away. That costs fuel and slows the whole cooker.

Gas and induction tops on AGA range cookers

On an AGA Elise, Mercury or similar range cooker, gas burners use spark ignition with flame supervision, while induction tops use coils, power boards and a cooling fan. A burner that lights and then goes out, or an induction zone that throws an error, follows the same logic as other premium ranges.

Safe owner checks and the repair visit

Keep hotplate lids closed when not cooking, and check that each lid sits flat and closes fully. Try a heavy flat-bottomed pan you trust. On a gas range cooker, dry and reseat burner caps after cleaning.

The hotplates draw from stored heat, so heavy use drains them and they need time to recover. Lids left open also lose heat quickly. Use flat-bottomed pans that make full contact. If the plate is slow even after resting with the lid down, the overall heat setting, thermostat or heat source may need checking.

Pans with thick, perfectly flat bases make the best contact with the cast-iron hotplate and transfer heat efficiently. Warped or thin pans lose a lot of heat. Avoid sliding heavy pans across the plate, which can mark the surface. Keeping the plate clean also improves contact.

Usually. The lids have hinges and insulation inside, and a lid that does not close fully wastes heat and can get very hot on top. The hinge may be bent or worn, or the lid may be distorted. We inspect it and order the correct parts for your model when needed.

The boiling plate is designed to be the hottest surface on the cooker and should bring a kettle to the boil fairly quickly when the cooker is fully heated. Timing varies by model and fuel. If it has noticeably slowed compared with what you are used to, the heat level or lids are worth checking.

Yes, whenever you are not cooking on the plate. The lids hold the stored heat in the cooker. Leaving them up for long periods drains heat from the ovens and the plates, and it also adds a lot of heat to the kitchen, which matters in a hot summer.

Light scratches and marks are normal on cast iron and do not affect performance much. Pitting or an uneven surface can reduce contact with the pan. Keep the plates clean with a wire brush, and avoid dragging heavy pans across the enamel top plate.

Like other gas ranges, the burner needs a clean, dry electrode and a correctly seated cap. Moisture after cleaning is a common cause. If it still will not light, the electrode, switch or gas supply needs testing. If you smell gas, turn off the supply and call the gas utility first.

Mostly cleaning. Brush crumbs off with a wire brush, wipe spills on the enamel top quickly, and keep lid seals clean. Lids and hinges should be checked during routine service, since a lid that does not seal well slowly raises fuel use and lowers cooking performance.
