Repairing Vulcan stoves in the Las Vegas Valley

Ask a line cook about the Vulcan stove and they will point at the open burners: the cast-iron burner heads and grates that carry stockpots, sauté pans and sheet trays from opening to close. On most Vulcan restaurant ranges each burner is lit by a standing pilot, and each has its own manual valve.

That simple design is durable, but it takes a beating. Boil-overs pour starch and grease into burner ports, heavy pots drop onto grates, and cooks lean on valves all night. A burner that will not light or burns weakly takes a station out of play when the kitchen can least afford it.

Standing pilots and why they drop out

A standing pilot burns constantly and lights the burner when the valve opens. Pilot outages usually come from a clogged pilot orifice, a pilot flame set too low, or drafts from the hood and doors. On some models the pilot is paired with a safety system that shuts off gas if the flame is lost.

We clean pilot orifices, set the flame to the right size and check that it reaches the burner reliably. A pilot that will not stay lit after cleaning needs a closer look at the supply and safety parts.

Clogged burners after boil-overs

Boil-overs leave starch, sugar and grease in burner ports. The burner then lights unevenly, with tall yellow flames on one side and none on the other, or lights with a pop. A deep cleaning and, if needed, a new burner head restore an even ring of blue flame.

Valves and gas pressure

Burner valves stiffen with grease and heat, and cooks may force them. A valve that will not shut off fully, or that leaks around the stem, is a safety issue and should be repaired right away. Flames that lift off the burner or roar can point to incorrect pressure or orifice size, which we test at the manifold.

Keeping burners running on the line

Staff should wipe up boil-overs once the burner cools, keep grates seated properly, and report weak burners early. They should never try to drill out orifices, force a valve or relight pilots in a way not described on the unit's label.

If anyone smells gas with the burners off, shut off the equipment and the gas supply, clear the area and call the gas utility.

Cast-iron grates crack from thermal shock and heavy pots, and once cracked they shift and tip pans. Drip trays full of grease raise fire risk and can block air to the burners. Keeping trays emptied and grates seated helps burners light cleanly and keeps the line safer.

Repair or replace burners and tops

Burner heads, pilots, valves and grates are all replaceable parts on a Vulcan range. Replacing them is almost always cheaper than replacing the range. If the range top frame is badly warped or corroded, we will tell you and price both options.

With the gas off and burners cool, remove grates and wash them, then brush burner heads to clear ports. Remove the drip tray and clean it. Avoid flooding burners with water. Regular cleaning keeps flames even and reduces pilot problems. Have a technician check burners that stay uneven.

Drafts from hoods, fans and doors, grease buildup and boil-overs all affect standing pilots. A pilot set too low is more vulnerable. Cleaning the pilot and adjusting the flame often help. If outages continue, the gas pressure or supply should be checked.

Shut off the gas supply to the range, stop using that burner and call for service. A valve that does not close fully can release gas or keep a flame burning unexpectedly. We replace or rebuild the valve and leak test the connection.
